Kadhi Pakora
This is one of my favorite dish. It is soury and has burnt taste of curry leaves.
Science: The whole process revolves around managing curd to not curdle and proper cooking of besan(gram flour). 20 min is the ideal cooking time of besan.
Ingredients: For two people
- 400 grams curd (25 wali dahi)
- 200 grams besan (Rajdhani besan (thodi mehngi milti hai))
- 1/2 liter water
- 4 green chillies (free wali)
- 2 red chillies
- 1 spoon mustard seeds
- few curry leaves (aas paas khi dikh jaega ped)
- red chilli powder
- 1/2 teaspoon turmeric
- salt
Phase 1:
- Put kadahi on stove. Throw curd besan water turmeric red chilli powder into it. Mix well such that no lumps are there in curd mixture.
- Now add water and turn on stove at medium high heat
- Once the boil start add slit green chillies and salt.
- With occasional stir cook for 20 min.
Phase 2:
1. Heat 2 tbsp oil in small pan.
2. Add red chillies,mustard seeds, curry leaves and wait till all mustard seeds pop.
3. Now add red chilli powder and turmeric.
4. Before it gets burnt add it to kadhi
That's all. Enjoy.
I am not telling how to make besan pakoras, its easy. Just mix left curd besan and salt. Fry on med heat in oil till it gets spongy. Add them to kadhi. Phew.
